How to archive feature services locally and keep visualisation?

I'm in the process of archiving GBs of hosted feature services from AGOL. I am exporting to FGDB and then saving a layer file of the service. That way, if i need to republish back up to AGOL, I can reassign the visualisation, field visibility and popup config back to the way it was.

However, is there a smarter way to do this? Can I use AGOL assistant or Python to modify the symbology of hosted services already published to AGOL? If so, I could just upload the zipped FGDBs at a later date, and then just run a script to reassign the symbology and config, rather than have to save down a layer file?
