Good morning,

Is there a way to manually add GPS meta fields to an already existing hosted feature layer? Thanks

You would need to run the Add GPS Metadata Fields geoprocessing tool on the source data and then overwrite the hosted feature layer.

Yes. It depends on the type of GPS metadata fields.
