Is there a way to manually add GPS meta fields to an already existing hosted feature layer? Thanks

Yes. It depends on the type of GPS metadata fields.
You can refer to Prepare for high-accuracy data collection—ArcGIS Field Maps | Documentation
field-maps-scripts/notebooks/Add GPS Metadata Fields_FS.ipynb at main · Esri/field-maps-scripts

You would need to run the Add GPS Metadata Fields geoprocessing tool on the source data and then overwrite the hosted feature layer.
