I deleted all view layers from my content that were listed under views on my hosted feature layer. However when I open the rest service for the layer, it still says I cannot change the source schema and the view is still attached. I don't understand why it won't go away. When I ran a code to see if I could delete it from the backend it says no views were found but, it still shows up on the rest page.
I am having the same issue. Were you able to resolve the issue and remove the ghosts of View Layers only listed in the Service Definition but not on the AGOL Item page, or Recycle Bin?
