How do I change the names circled in red?
I have changed the name of the layer but I need the label to change also- mostly for ease of use in Field Maps.

Open the map in Field Maps designer
Click "forms" on the left hand side and select the layer in question.
At the top you should see two tabs ("Form" and "Templates". If you click template you can highlight the individual templates (in your screenshot above it seems like there is only one per layer).
On the far right now there should be a "properties" pane open where you can change the "display name" of the template.
Save your changes and you should be fine
