I am currently using the most up to date version ArcGIS Online. What I would like to do is calculate slope over a certain percentage (35%) within a given polygon. I just need the acreage or square footage of the areas above 35% slope within that polygon. This is for project planning. I found one similar post, but it is 12 years old and I wonder if some of the functions or processes have changed since then. Thank you to any and all who spend any of their time on this.

Not in AGOL but in Pro, several ways, perhaps
isolate the polygon raster values using
Extract by Mask (Spatial Analyst)—ArcGIS Pro | Documentation
From there you the raster calculator
"slope" > 35
assuming slope is already in percent and the slope raster is so named
