If I manage a feature template for a hosted feature service in map viewer classic, does that feature template also apply if I add that layer to a new map? Is it possible to have several different feature templates in multiple maps?

So you can save templates to the layer/item itself. If you would like to have the templates every single time you use that layer/item elsewhere, save it to the item itself:
In addition to Map Viewer classic, you can also manage your feature templates in Field maps web designer and save it to the item. This will ensure that any time the item is loaded into a map, the templates are exactly as you have configured them before.
As for the second part of your question, yes you can have multiple templates for a layer but this would be saved to the item (so you cannot have multiple templates for different maps).
We are also working on bringing support for managing feature templates into Map Viewer as well, so stay tuned!

@bbollin That explains it perfectly. I was configuring a feature template for a map and it kept changing the symbology in other maps that I had the feature service in. I guess I always assumed that the feature template only applied to the symbology in that web map. Lesson learned! Thank you very much for your help!
