Hiding attributes from the Data tab of a Feature Layer, is offered in two areas on the Data Tab Overview. However, if the Attribute or column is selected to be turned off/on, upon exiting from the Data Tab screen, the Attribute Table will revert back. What is the point of this option, if the change will not stay?
Either is should apply the change made or require that it is done to the Feature within the Map Viewer. I am utilizing the most current versions of Enterprise/AGOL/ArcPro.
Thanks for your feedback! You are correct that currently any changes made to column visibility on the Data tab will only be temporary for the purposes of data exploration.
However, if you own the data you can control how the table appears (including column visibility) by saving table configuration to the item via Map Viewer or the Visualization tab (check out this blog for more info).
Would having the ability to make and save changes to the table appearance via the Data tab be valuable to you/your workflows?

I often reference the data tab in my day to day for hosted feature layers when I quickly want to see what/when were the last few records created, for example. Being able to permanently customize the field order, hide fields, and sort would be a benefit for my use case.
Having a 'show default field settings' (i.e. all fields) / 'show custom field settings' quick button to toggle would then also be useful.
Then when adding the hosted feature layer to a map, it could inherit the 'custom' field settings. Of course, this could be overriden in the Map Viewer settings, but not affect the 'base' custom field settings in the data view.
When I turn off a field in Configure Pop-up in the Classic Map Viewer, that field is also turned off in the attribute table. That isn't the case in the new Map Viewer. Even fields that were hidden in the attribute table of a layer in the Classic Map Viewer automatically becomes visible when opening the same map in the new Map Viewer.
