How do i choose the stretch type in ArcGIS?

I have created a map for the mean value of land surface temperatures. Now I want to edit it in ArcGIS. How do I decide which stretch type I need? Minimum Maximum stretch type because of the temperature data? Or none stretch type? Or something else? I recognize a change in the amount of colour space in the image. Thanks in advance!

It really depends on how your data is distributed and what you are trying to achieve visually. There are some great resources on this Improving the display of raster data—Help | Documentation ,  Working with the histogram when displaying raster data—Help | Documentation and Stretch function—Help | Documentation would be great starts to increase your understanding around this. Hopefully this assists you in achieving the result you are after.
