DEM does not display correctly over other data

I am attempting to display a DEM of Slater Crater on the Lunar South Pole. However, the DEM does not display correctly despite having the same extent and spatial reference as the other data. 

The DEM displays when it's viewed at a different zoom level and then disappears as seen in the screenshots below:

Any clue as to what's causing the DEM to display incorrectly?

what is the map projection? is it one like those used in ... Antarctic Maps (arcgis.com)

The spatial information is as follows:

I've used the "define projection tool" to project the DEM to be the same as a polar base map.

That could be the problem, you don't "define" a coordinate system unless it didn't have one to begin with.  You have to specify what the coordinate system actually "is".  If you want to display it in another coordinate system, you have to define it correctly and let "projection-on-the-fly" handle the projection or you actually have to project it using Project Raster (Data Management)—ArcGIS Pro | Documentation
