My basic workflow is that I have a complex feature service (a couple of feature layers and a handful of standalone tables, with a few relationships between them) that I would like my users to be able to see in Excel, and for updates from ArcGIS Online workflows to show up in the Excel.
I had to change the source Feature Service for one of my excel spreadsheet files. I had already shared this .xlsx to my users as a stable SharePoint link, and I wanted them to be able to continue to use it rather than re-directing them to a new file. However, this has seemed to complicate my ability to access the ArcGIS Add-In and sync.
At the best of times, I have a hit-or-miss experience getting the 'Map Data' tab to show, which is where I use the "Sync with ArcGIS" button to capture updates from the feature service, into the spreadsheet. In the case of the .xlsx in question, the ArcGIS for Excel pane shows as blank when I try to click "Show Map" under the ArcGIS tab. See below (GIS content itself was blocked out for security).

Thank you for posting your question. There is quite a bit to unpack here, so lets break it down!
Workflow 1, as described, you are adding feature layers and standalone tables from ArcGIS Online to Excel, correct? And are you editing in AGOL or Excel worksheet?
The end goal is to share the Excel sheet with your users via SharePoint link, is that correct? Keep in mind there are ArcGIS for Excel and Microsoft workflows happening here.
Workflow 2, you mentioned you had to change the source feature service for one excel worksheet. What did you change it from? Can you clarify, please. The only way I see this happening is if you re-added the feature layer or added the updated hosted feature service to the map in the excel worksheet. In which case you would update (reshare) the map to AGOL.
End goal here is use the same SharePoint link, in which case you should be able to but the update (or work) needs to be synced and completed in the ArcGIS products first.
Workflow 3, The Map Data will appear/disappear as applicable to data manipulation. For example, upon opening a map you will not see it but if you click on a row you will see it appear. See demo here.
Workflow 4, ArcGIS for Excel pane shows as blank when I try to click "Show Map" under the ArcGIS tab, this could be some kind of data corruption. Are you able to debug this or use fiddler or developer tools to see what's happening behind the scene?
