I have created a web map in ArcGIS Online that is using a Continuous Color style based on the last_edit_date system field. The use case here is that I need to field verify some data but want to make sure that I'm going to the sites that were updated least recently first.

I just tried this using an Android phone. I did try with lines instead of points, but I received the same issue in field maps. All of my lines are gray.
I changed the symbology to a single color with no fields used for display, and it showed up correctly in ArcGIS Field Maps. I then selected a field (Material) and had it show different colors for each value, which also worked. This might just be an issue with the continuous renderer.
Upon further investigation it appears this is a known bug listed as 'under consideration'. If i were you I would call Esri Support and get your Organization attached to the bug to bring more attention to it. Other than that you just have to wait for them to fix it or you can try to download an earlier version of field maps.

Good find! I'll see if support will add my org to that bug #. All of our company devices are managed through an MDM so I'm not going to go down the path of trying an older version of the app...
FYI...a fix for this should be included in the next major Field Maps release (26.2).
