We are currently transitioning some of our ArcGIS Online Experience Builder apps to our Enterprise installation. We are currently running v11.3 and some of the tools developed in our AGOL app are not available in that version of Enterprise. We plan to upgrade Enterprise to v11.5 when it becomes available, so we would get feature parity, but until then, would a work around be to install and use the developer edition of ExB so that we can get the same features running on Enterprise?

First of all, I'm a big fan of the movies based on your work. I'm not much of a reader.
Getting access to all of the latest features in Enterprise Edition is one of the great perks of Developer Edition. It can be very useful even without coding experience. You should be aware that apps made in Developer Edition won't really be in your Enterprise, unless you do a very complicated and technical workaround. They will need to be hosted on a web server. A simple workaround would be to create an Experience Builder project with only a full page Embed Widget and have it direct to your deployed application.
