i'm using the edit widget in experience builder with feature layers you can select if you want to be able to Add / Update / Delete
, but i can't see any way to do the same for a table, they don't even show in the list

The related tables will follow their related layers' updating/deleting privileges.
If you turn on the layer's delete, the related table can delete records too.
If the related table does have a relationship with the layer, and the editing form has been configured with a related table field, the related table will display and you can add/update/delete its records.
Hi @Allen_Zhang thanks for that, it does show the relationship and when i try to edit it i can add / update / delete but that is because i am the data owner, any one else who tries it just has the ability to add/update
the feature service has all three enabled, i just cant see anywhere to enable delete against the table

A related table's updating/deleting privileges follow its related layer's privileges, just like Map Viewer.
Adding related records is always available regardless of the layer's setting.

yea i believe it is but i can't find anywhere to enable it, "tables" do not appear in the same way as layers within the edit widget

ah, i didn't want to allow them to delete the parent only the related child table record
