Hi, I wonder if there is a widget in ArcGIS Experience Builder which would work with an imported map (from 'My Content'), whereby the user would click on a polygon on the map and a new page on the website would open?

There is no default option/widget that would open a link by clicking on a polygon. It would be possible to make a custom widget in Developer Edition that could do this, but from a UX perspective, it would get annoying to the user, especially on a touch screen.
A better UX option (that does not require Developer Edition) would be to build a custom popup in the Webmap Viewer that contains a link to the page. (Let me know if you need more detailed instructions on how to do this.) Also note, that if your feature layer contains a fully formatted url like, https:\\www.mycompany.com\page, it will be formatted as a clickable link by default in a popup.
I was looking to do something similar, but I don't think there is any way to change the page based on selecting a feature on the map. A really good idea, just don't see any way to do it currently. What you could do (requires an extra click), but have the user click on the polygon to select it, then click a button to take you to the page.
