Font sizes should be customizable between screen sizes. There are many cases where one might want a much larger font size on desktop than on mobile but the most common reason would be Headings. As it is now, a heading font must be the same size across all screen sizes and that is very limiting.

You can already customise and change font sizes between different device screen sizes. When you switch to viewing your app in either the medium or small screen views, you can to enable the Custom setting on your header, body, and/or footer and then customise anything the way you like to make it work for that range of screen sizes. This includes making text smaller or larger. After you have enabled the Custom setting, make a copy of the text you want to change, then send the original one to the Pending List. This is because even if you've enabled the Custom setting, you're still working with the same content, and any changes will actually continue to affect your desktop text. So by moving the original text content to the Pending List the desktop settings are preserve, but it is now out of the way. Now you can adjust the new copied text any way you like - smaller text, larger text, different text, etc. Hope that helps.
I've also run into this issue with headings on mobile vs desktop. I use the pending list to hold the original (larger) version of the text, and use a duplicated text widget for the smaller text. The problem with this is that the text widgets are no longer linked; if I change the wording in one, the other doesn't change. It would be fantastic if it were more seamless.
@RoryMcPherson, I'm aware of the ability to customize styles by screen size, but in my experience, font sizes are not one of the few styles that can be customized.
