ArcGIS Enterprise: Is there a difference in performance/functionality between a group of layers being published as single Feature Layer or together in one Feature Layer?

I want to publish quite a few layers as feature services on our ArcGIS Enterprise platform. I can either create one Feature Layer per layer or put several together in one Feature Layer (as sublayers - not sure how to call that). Is there a difference in functionality or performance if I choose to do one or the other? Should often used services be separated?

The following image shows the second option with several layers in one Feature Layer.
