Arcgis Datastore Server Crashed Completely beyond repair

We have Arcgis Enterprise v10.8.1 with separate server machines for Portal, Arc Server (Hosting), Image Server, Datastore and SDE Database (Postgres). Yesterday our Datastore server got crashed and every attempt to restore it back seems to fail. we have almost 3000+ published services and 50% of the content is 3D scene layers.

At the most we are also trying to recover the data HDD from the old server and move its content on new server... 

I want to know the implications / way forward on both scenarios..

1) Fresh Server for Datastore (without any data directory restored)

2) Fresh Server with old Data directory restored 

Some more info about our current setup w.r.t. Data..

All our vector data including 3D multipatch is published from SDE.

Our Integrated Mesh Model is published thru Arcgis Server via ESLPK.

All our Raster Images are published thru Image Server.

Datastore i believe is mostly used for Hosted feature layer and 3D scene caches. we hardly use Hosted feature layer, at the most it can constitute 5% of our overall data but the 3D scene layers are large in volume. I may be wrong in making the above assumptions regarding the way datastore functions hence putting the question here so that i can plan my way ahead in such a way that my data loss is at minimum..
