I realize you posted this question over a year ago, but this just came to my attention - so I am posting a reply in case other community members see this thread.

ArcGIS Monitor does not currently track this behavior. ArcGIS Monitor collects metrics on ArcGIS Enterprise system health, performance, and resource usage - for ArcGIS and its infrastructure. It does not collect detailed usage within a web app like ArcGIS Dashboard of ArcGIS Experience Builder app. Sorry.
