Is there a document or help pages which shows the steps (with screenshots) for installing ArcGIS Enterprise?

It will depend on what components you want to install, and what would be your deployment scenario (Single Machine site / Multi-machine site).

For the base deployment of ArcGIS Enterprise, you could check the steps in Tutorial: Set up a base ArcGIS Enterprise deployment.

That video is terrific but would be great if there were a document that covered all of these
