Can you use ArcGIS in conjunction with photogrammetry to create 2D planometrics?

We have a need to create planometric drawings for our mining operations as each mine expands or shifts activity to a new location.

Now that we have our own drone program we can generate orthomosaics of each project area. Normally when we get the image, we manually go in and identify wooded areas, roads, building outlines, utility lines (non buried), etc.

I'm curious if there is a tool or process in ArcGIS that would do this for us? Or at least generate something that we could review vs create from scratch ourselves. Even that would be a significant time save!

Have you looked at the Image Classification toolset in ArcGIS Pro?  Overview of image classification—ArcGIS Pro | ArcGIS Desktop   

We have used this with some of our drone work.
