Using Kotlin for writing a JavaFX Runtime app is a perfectly viable solution and for Android developers it is becoming the norm. The uptake of Kotlin for JavaSE developers is however much slower.
In terms of the gradle build script, it won't be any different from what you would create for an application written in Java. Here is a tutorial which explains the process of writing a very basic mapping app:
