Pyramid displaying 'No Data' Value

I have reclassified some raster data and changed the 'No Data' value to zero. After reclassification I deleted the 'No Data' (which was 0) and it gone, however, Arc keeps asking to build Pyramids so I went a head and built them but once it finishes the 'No Data' value reappears but I am unable to find it and delete it from the attribute table.

Does anyone know a way to delete the 'No Data' value from the raster after the Pyramids have been built?

Note: I conducted to a similar study with Arc 10 and I did not have this problem, I am running 10.1 now.

As I understand Zero is a data value and thus assigning NoData to zero value takes out valid value. However when you calculate pyramids some default statistics or actual pixel values are calculated producing the NoData.

I don't know if this specific to ESRI processing or display. In fact I have problems with NoData values of 256 for 8-bit images and am not able to get any answers too.

What is the desired output, raster or table? Why not just set "no data" to hollow in symbology? It is also curious that it continually asks to build rasters? Is it doing that on the same raster or every time you process (do something to) the raster? I assume you could always create a raster att table and delete it from there...or query it out.
