NLCD raster - crashes ArcMap when requesting "unique values" symbology

I'm using ArcMap 10 (SP2) and adding recently extracted rasters of the National Land Cover Data (NLCD) set from the National Map (http://nationalmap.gov). The data set (.tif file) comes up fine in ArcMap, but whenever I request  "unique values" symbology, ArcMap immediately crashes.

Anyone else having this problem?  Below is what I've tried:

Other symbology methods work (e.g., classify, colormap, stretched).

It doesn't matter which NLCD year I use - 2006 or 2001.

It doesn't seem to matter how small or large the extract is.

I've tried exporting to a GRID and IMG formats - same problem.

I've downloaded test extracts from several different USGS servers, all have the same result - crashing when requesting Unique Values.

I've tried following a suggested USGS workaround to a different issue regarding the NLCD landcover that I found on the ESRI Forum sites - still didn't work. (http://forums.arcgis.com/threads/23920-Problem-Creating-Raster-Dataset?p=86488#post86488)

We identified this issue as a software defect in ArcGIS 10. Bug ID is NIM068695. This is not an issue in ArcGIS 10.1 Beta 1. This issue is targeted to be fixed in next service pack 3, which is due out later this year.
