New projection for completed map series

I was wondering what might be the best approach for my scenario.

I have a map series (data driven pages) for a 100-mile long easement. These maps will be part of a report that will go to multiple agencies with different requirements and asking for different projections. I have one map set in WGS-1984 (as this was asked for for digital and printed format, hmmm...) anyway, one map set in WGS-1984 GCS.

I need to create another map set in a state plane system for a state agency. The maps have between 7 and 15 layers present. Do I need to re-project all of these and create a whole new map set, or can I just change the coordinate system in the data frame, add appropriate transformations, and save this as the State Plane version of the map?

What would people recommend?

That'd be the easiest way to go about it; ArcMap will project the data on the fly.
