In arcGIS 10, when in editing mode and trying to delete a part of a multipart polygon, I follow the instructions below, but if I double-click on a polygon, the EDIT VERTICES toolbar pops up.

How do I stop this from happening?

"To remove a part from an existing multipart feature, double-click the feature with the Edit tool, right-click the part you want to delete, point to Part, then click Delete. Finish the sketch when you are done".

It used to work for me, but not since I used EDIT VERTICES.

I agree.  Having things pop up on you when you're working is very annoying, and distracting.  I have been looking for a way to turn this off completely, but I haven't found anything yet.  I do have a solution for this.  You can dock the edit vertices toolbar outside of the map area (with your other toolbars), and then the edit vertices toolbar will not pop up when you're editing.  It is not much of a fix, but it works.  Hope this helps.

A couple of things:

First question (in your subject line) Go to Editor options. On the General tab there's an option to "Show feature construction toolbar". Uncheck it.  That should do it!

Second question, I always use "explode" on multi-part features.  Then you can do a select by att's and merge the remaining parts back together.

I'm curious though, if you're intention is to get rid of multi-part altogether.  You might consider using a topology rule: must be single-part or using the GP tool multi to single part.
