I am trying to learn how to customise Story Maps to make it a bit more specific to my individual projects.

I was wondering if anyone could tell me how I download from GITHub and then host it on the server to be able to customise it?

Here's a blog post that provides an overview of how to download the apps for hosting and customizing: https://developerscorner.storymaps.arcgis.com/an-introduction-to-hosting-your-own-story-map-e2450181...

Hosting on your server will be specific to the server/provider you choose but your provider should be able to offer assistance with that. One free service, that you can also just use for testing, is Surge.
