Hi.
You may want to check a couple of things:
1- In the Survey123 website, open the settings dialog of your survey. Then go into the webhooks section and make sure you have the 'Trigger Events' configured to trigger when the record is edited.
2- In the Survey123 field app, check the version and make sure it is 3.5
