It looks like some things have changed since the last time I wanted to delete fields form an attribute table. I used "add join" to add a csv table to a feature class. I wish to remove what I have added to try something different. However, I can't seem to get it to work. If I use the "delete field" tool, it only shows fields that were original to the feature class. I then tried to delete the fields from the attribute table, but no action is taken when I select the field and click delete.

The joined field shouldn't be part of your feature class and isn't able to be removed by delete field management.
Use Remove Join (Data Management)—ArcGIS Pro | Documentation
use Join Field (Data Management)—ArcGIS Pro | Documentation
you can specify which fields to carry over during the join
