Is the ArcGIS Pro compatible with Stealth Topomouse Z too? Or is just with V model?

With these special mouses case is such that they are such a rare (and old) usecases that documentation tends to be outdated. New mouses are not neccesarily tested by Esri but in generally they work if they have been working with past variants. Changes between device generations are such minor that that they typically work without issues. Special photogrammetry mouses are just devices somewhere between keyboard and mouse so the thing you benefit from these is that it has huge amount of buttons to program to special functions needed. So ther is not really a hightech in these devices - just huge amount of buttons and good design for constant full time working. So it is just a mouse like other variants of same product.

So if some variant of special photogrammetry hardware has been tested to be working you can assume that all variants of that same product will work equally. So if  V and Z variants works in Windows generally and some of them is tested against ArcGIS you can assume that all variants work with ArcGIS. 

This is not guarantee that it will work but this is my personal experience. I have used non tested hardware without issues and from that I have made conclution that list of supported hardware in this kind of things means that Esri has tested those devices and say it definetly works with them but it might work well with some other hardware too.
