I would like to repeat some of the intro tutorials "Label a Map", "Visualize Temporal Data", etc. but my searches pull up my previously completed exercises. How can I download, a fresh map so I can do the tutorial a second time?

The data for those looks like it is in ArcGIS Pro Project Packages (PPKX files). When you first open a PPKX file, it extracts a copy of the project to your Documents\ArcGIS\Packages folder. The project will have a name like the project package name, with a string of numbers after it. This project is what you'll be working on when you save and open it again to continue your work.
Perhaps a bit confusingly, when you open the PPKX file again, it checks to see if it has been extracted there, and if it has, it opens the project from your Documents\ArcGIS\Packages folder, rather than cloning a new copy.
To start fresh, rename, move, or delete this folder and then open the PPKX file again.
A new copy with the original data state will be created.
