When you add a LAS dataset to your TOC, and symbolize by elevation, the elevation range is set to the min and max of the dataset. If you zoom in on a specific area of the dataset, you can right-click on the LAS dataset in the TOC and select "Reset Legend Elevation Range" to reset the range based on the display extent.
I do this and the map display changes as expected. However, the min and max values displayed with the color ramp in the symbology do not change. Is this expected behavior?
I would expect the user should know the new elevation range min/max values that are used in the map display.
