I have found where to edit the description for Single Symbol and Unique Values items in the Symbology pane. However, for the quantity symbology methods, I cannot find it. I know it is possible because when I import an ArcMap mxd, the description shows up in the legend, just like it would in ArcMap, e.g. with a forced line break and partial italics, etc.
