How to easily change the color of annotation labels?

I have an annotation layer with 3 symbol collections. I want to easily just change the color of the text on my labels without having to make another symbol collection and then change all of the values in the attribute table to match up with that collection. Surely there must be an easy way to do this.

Try: Symbol Substitution  

You can also right click on the annotation feature class in the Catalog pane --> click Annotation Feature Class Properties --> copy and edit a target symbol making a new symbol ID and then edit the SymbolID field with the new symbol ID.
