When building overviews for a mosaic raster dataset, statistics are automatically calculated.
When statistics are present for a raster, clipping is automatically applied making the image look overblown and unnatural.
In ArcMap, you could remove statistics as outlined in this article:

Doing this removes the automatic clipping and images return to their natural looking state.
Currently, it is impossible to remove statistics from a raster in ArcGIS pro. Please implement statistics removal in ArcGIS pro so that I do not need to use ArcMap to do it. Until this feature is implemented, I will need to continue to use ArcMap to remove statistics. If you want everyone to migrate to Pro, be sure you have the complete functionality of ArcMap, ESRI!

I, too, would like this be an option within Pro. I am having to use ArcMap as well unless their is a new way of doing this now.
I agree. I ran into this same issue this spring. I couldn't believe the option was not in Arc Pro. I had to go into Arcmap to remove the statistics which took about a minute. I can't imagine having to re-process huge raster datasets because the calc stats can't be removed. Going to be a huge problem when arcmap is no longer accessible. This is core functionality that should be in ArcPRO. PLEASE FIX ESRI!!
Bumping this idea. I just generated a Mosaic Dataset in ArcPro.
The resulting dataset was not stretched and did not have statistics generated. Of course, the output did not display properly at all zoom levels, so overviews must be built.
Once overviews are built, my dataset displays properly, but is now stretched and has statistics generated for it.
There is absolutely no way in ArcGIS Pro to remove statistics to prevent the stretch from happening when adding the layer to a project. Thus ArcMap is needed to remove the statistics and have the resulting dataset display normally in ArcGIS Pro.
It is far too much work to babysit users who add the dataset to ArcPro, to help them remove the stretch everytime. The stretch SHOULD NOT be enabled by default. If ArcPro did not stretch by default, we could have statistics on our mosaic datasets no problem.
An acceptable workaround is to copy the mosaic dataset to a work-copy before adding overviews to it. Then append in the overviews to the original. The original should then have overviews and no statistics.
