A magic wand tool similar to Adobe that can be used on imagery basemap. This tool would save hours of digitizing in some cases (i.e. I had a canal in the desert that I needed polygons for Lidar elevation correction. One click per section would've been a lot faster, and the definition was very clear vs the digitizing up and down and around each time a bridge crossed the canal)
ArcGIS Desktop (not Pro) has raster painting tools. I'm surprised they've done away with that in Pro. You could use this to do the digitizing and then just run Raster to Polygon.

With all the increased focus on raster, AI, etc I was expecting a basic magnetic lasso like Photoshop to select a county ortho in a few clicks. I have to trace the entire county apparently. That's.. hours. I remember using something called ArcScan in ArcMap that was kind of like this. So they never incorporated this useful functionality in Pro? I used to rapidly digitize some scanned maps in grad school. I can't imagine how I would have done it otherwise, it would have been orders of magnitude longer.
