Limiting Editable Fields

In a web map editable feature class' table I want to give my users the ability to see all fields but make editable only certain fields (and even in the Desktop scenario too). Currently a lay user may inadvertently screw up many fields that don't even need to be edited.

Make the attribute you won't want edited as Read Only.  I do this all the time when integrating staking data into existing distribution lines.

In the December 2020 ArcGIS Online update, you can now configure which fields editors can/cannot edit in an editable hosted feature layer. This capability is planned for hosted feature layers in ArcGIS Enterprise at the next release. Thanks for the idea, and please let us know any feedback.

As mentioned by the previous poster, this functionality does exist in ArcGIS Online.  For mor information, please refer to the documentation linked below for configuring fields editability.
