It would be great if we had the ability to turn patches completely off in the legend.  Especially for rasters, where the RGB colors do not need to be shown in the legend.

Right now the trick we use is to set the patch sizes to 0.00001, because you can never complete turn them off. (0,0 does not work) Unfortunately, it still leaves a really tiny patch.

This is available in ArcGIS Pro. See Work with a legend item for more information.

@AubriKinghorn - Can you explain how to hide patches in a legend in ArcGIS Pro? I don't see that option in the documentation, Work with a legend item. I would like to use a map layer's name or label as the title of the map using a legend element so when an individual layer is visible, the map title changes. I can turn on the layer name and turn off the label but the patch remains. I thought about doing this with dynamic text but I don't see an option for getting the visible layer name. In ArcMap, I used the same workaround as the OP, but the 0.00001 sizing doesn't work in Pro. My workaround for Pro is to create a duplicate dummy layer, change the patch symbol properties to no fill color and no outline color, and then use Arrangement to push the empty patch to the far right. Pro doesn't display the patch but it seems to be detected because the legend element is wider than I want it to be, with extra white space to the right.

I apologize, I misread the idea. I thought it was about turning off the legend item, meaning not including the raster data in the legend at all. That is possible, you can uncheck the legend item in the Contents Pane.

Rereading this idea and @KeithWitt's comment made me realize it is just about turning off the legend patch, but leaving the text. There is not currently a way to do that in ArcGIS Pro.
