I have had a problem for the last 3 weeks or so that any map or layer authored in ArcGIS Pro reverts to default black dot symbology when uploaded to agol. I have a set of symbols I've used for years and they never had a problem before, but now anytime I upload anything at all, the symbology is wiped, and generic dots are used instead. It doesn't matter what the symbol is, or if it is a standard single symbol or unique value symbology. It is all wiped out. Has anyone had this problem?

ArcGIS Pro 3.1 changed the default setting of the "Use symbol types compatible with all clients" to off in the Share as Web Map dialog. If you click this on again, does that solve your problem?

This did fix it as far as publishing a map goes. If I publish a layer, it still defaults to a black circle. That was not the case before. Is there a setting to change so that this is fixed for layer publishing?

I actually just found the same setting for the layer publishing. It is under Configuration and then in the "Configure Parameters" submenu. It is a text box shaped symbol. Thanks for the help, this was driving me nuts.
