When using the ArcGIS Web AppBuilder and adding an expression to create a filter, my date only field does not appear as an option, despite the fact that date information clearly appears in the layer and in pop-ups for each record.
I'm having a similar problem when editing my dashboard: my date only field does not show up as an option for my table or charts, even though the date appears in pop-ups in my map.
Please help!

"Date only" is a newer field type that is not supported on the older, JavaScript API 3.x backed Web AppBuilder application. See more in the blog below.
Time is on Your Side with New Field Types in ArcGIS Online (Oct 25, 2023) - specifically the "Where to Find New Field Types" section
also see Save the Date: Transform Your Data with Date-Only Fields in Map Viewer (Sep 25, 2024)
Is there something keeping you from using newer app building tech?

Thanks for the reply. I'm using the version made available to me through my university's GIS Hub Community.
Sounds good - you should have access to the newest apps then (since it's ArcGIS Online). If not, talk to your administrator!
