Changing colors on thematic maps

How can I change the colors or number of levels of the thematic demographic maps on arcgis.com?  For example, I may want to display just above & below the median income, rather than with 5 catagories.

Unfortunately, you can't do that.

The technical reason is because the services are cached map services. What's being displayed is a series of tiled images where the symbolization is burned into the image. As an analogy, imagine looking at a digital photo you took and wanting to change someone's shirt color...it's not something you can easily do.
