Grouped layers in Services are not fully supported and there appears to be no way to get grouped layers in AGOL besides adding a full service, which is not always practical.
Also, referencing a single sub-layer from a REST service does not allow for all the functionality of the same layer if added as the whole service. There should be no reason it should be handled differently, especially with regard to labels.
