Hi -- you can turn off the global navigation bar (i.e. navigation panel, search bar, new button if signed in, and sign-in button) can be turned off by doing the following steps...
1. Go to the site editor for the site in question

2. In the customize side panel, select "Settings"

3. Select "Capabilities"

4. Select to turn off "Global Navigation"

5. Save the site

We typically recommend not doing this as it will remove the ability to directly sign-in to Hub from a site and it's pages.
