Hello,
I've created a very basic contingent value based on one feature class in Pro.
When publishing to AGO, I cannot find anything pertaining to these contingent values. Moreover, the same is true in Field Maps.
I've seen similar posts on the topic but have not found a concrete solution:
Solved: Contingent values stopped working in Field Maps - Esri Community
Solved: Contingent values not pushing from Pro to Field Ma... - Esri Community
Is the functionality unavailable or am I missing something? Thanks!
From a Field Maps Developer. "Contingent values are supported in ArcGIS Online and in Enterprise for non-hosted feature layers (e.g. backed by an enterprise geodatabase). They are not supported in hosted feature services on Enterprise yet."

So if you are in ArcGIS Online, in theory they should work. If you are publishing to ArcGIS Enterprise then the service can not be hosted.

Thank you for prompt response, @JustinReynolds.
It appears I need to use a form within Field Maps and cannot use the feature's schema developed in Pro?
Hello,
Yes, you will need to configure a form using Field Maps Designer. If not, the form will be basic functionality (question/ answer) based on the field order defined in your schema. The logic that handles contingent values is derived from the Field Maps form.
You can start by allowing Fields Map Designer to auto-populate the form configuration by selecting Convert Popup. That may be enough to get the CVs to work.
Keep an eye out for the Mobilize your Organization with ArcGIS Field Maps webinar recording. The webinar was yesterday and they touched on contingent values (they should be honoured in the Filed Maps Designer).
