Currently, we are not able to symbolize the same layer from a hosted feature service more than one way in a hosted map image layer. When attempting to add a layer from a hosted feature service to a hosted map image layer multiple times (with different symbology and/or definition queries), only the symbology of the first layer is visible in the hosted map image layer when published.
