I am trying to understand what is the support of 3D data on Collector for ArcGIS, and on the other field apps. I've looked at the field apps documentation, the slides from Esri UC, GeoNET, etc.
So, with feature services based on feature classes with z enabled, the z coordinate can be capture with GPS in Collector, right? For the moment, is this the only 3D enable functionality in Collector and the other field apps?

with z enabled feature service, using GPS to collect, the z coordinate is populated with altitude (MSL) from GPS in Collector. If you manually add a point for the feature, it will use default value from Z.

Beyond a Z-enabled Point, Line, or Polygon feature layer, Collector can also work with multipatch feature layers so that you could actually collect data on 3D features in the app.
If you're looking for a full 3D experience for exploring 3D data on mobile, you can also look at ArcGIS Earth and you can even use the web-based SceneViewer in ArcGIS Online and ArcGIS Enterprise on mobile.
