Labels for editing symbol

I'm using the sample code (http://resources.arcgis.com/en/help/flex-api/samples/index.html#/Default_Editor/01nq0000001r000000/) to build my editing application but when I put in my services the legend area shows the acutal layer name.  I would like it to be like the example and show the word "grant" instead of sde_Amanda_Hutsel."SPATIAL\AMANDA_HUTSEL".GrantHomePoints.  How do I do this?
