It would be helpful if we could use the SQL Expression Builder in the Create Database View geoprocessing tool.

Hard agree, whoever originally said that is a genius (hahahaha).
Having some sort of expression builder, as well as a validator, would be awesome.
The current method of "write your query and then see if fails halfway through" is... suboptimal.
agree! building a definition query will give you clues as to errors in your script but absolutely none for this tool.
