If an university has many single use licenses under their educational model is there any option to automate the installation and authorization of a lab that reduce the work for the administrator of those licenses?
You may want to check out batch installations. You can also use a command line to authorize licenses with a prvc file:

I am not familiar with your school's contract but there is site license where one authorization code can authorize up to x number of licenses. This way you can install and authorize the application silently. As for the license itself, contact Esri's Customer Service or Account Manager to discuss your options.
