Interpolate water levels of gauge stations

Hi there,

I am currently working with water levels at specific gauge stations. So these stations are my point features which I want to interpolate. What do you guys think is the best method to do this? And why? At first I started with IDW but not sure if this one is really the best way.

Luca - I am by no means an expert on interpolation but in my quick review of the interwebs it seems that Kriging is used by many water/groundwater scientists.  This Learn ArcGIS course also discusses various interpolation methods too - good stuff to learn here.
